Ingredients
1 lb red potatoes, cut in half or quarters de-
pending on size
6 tbsp. extra-virgin olive oil
1 clove garlic, thinly sliced
1 sprig rosemary, chopped
1 sprig thyme, chopped
Salt and pepper
Method
Preheat oven to 475 degrees. Put potatoes in
a roasting pan and sprinkle with above - roast
until tender, about 30 minutes.
FOR ROASTED POTATOES
with mint chimichurri, roasted potatoes, and green beans
